Why is good stuff cancelled?

Bah!
I was going through some old tapes and found some cancelled series like Firefly and Freakazoid (even Invader Zim - Headge you bastard!) and wonder why they get cancelled so early on.
There are a couple of tv series that got low ratings in their first season but then took off a few seasons later. I think Baywatch (ok, so it's more soft porn and not sci-fi at all) did not do well at all in it's first season.

Or let me rephrase ... just finised watching season 1 of Earth Final Conflict .. Why is a good lead actor cancelled (terminated) ?
